Gangsta! Turkey Chorizo Burger Wraps

I was trying to decide a tasty way to eat a burger without a bun. You know those days when you think you have something in the house, you don't have it and bam! too lazy to go to the store. Of course, my wife keeps asking me to do stuff in a healthier fashion. I love chorizo - not so healthy - but you can do this without the Chorizo if you want but the flavor is sooo good!

Gangsta! Turkey Chorizo Burger Wraps 


Ingredients

1 lb of Ground Turkey
2 links of Spanish or Mexican Chorizo (ground)
1/2 onion chopped
1 tablespoon of oregano
1 tablespoon of minced garlic
Bag of shredded cheddar or cheese of your choice
1 head of cabbage separated to be used for wrapping
Salt and pepper to taste

Don't forget your favorite burger toppings: tomatoes, ketchup, mayo, pickles!

Mix Chorizo, Turkey, onion, oregano, and garlic.
Add salt and pepper to your taste.
Make stuffed patties by using a stuffed burger tool, or by taking two thin patties, adding cheese in the middle and pinching/molding together.
Cook on a flat top grill or your choice of pan, until nice and brown.

Place the cooked burger inside the cabbage leave, add your favorite burger toppings and wrap. In the show I used tomatoes but you can put whatever you want with the burger when you wrap them.

Gangsta! Vegetable Lasagna



Vegetable Lasagna
 My family often asks me to make healthier foods. This one was a hit. A delicious lasagna with no pasta? absolutely. Try it, you will be glad you did!

Ingredients:

4 Zucchini
4 Yellow Squash
1 teaspoon of red pepper flakes
2 teaspoons of extra virgin olive oil
1 cup of cottage cheese
1/2 cup of shredded Mozzarella cheese
1/2 cup of shredded Cheddar cheese
5 Eggs
4 cups Panko breadcrumbs
1 tablespoon chopped garlic
1 teaspoon Oregano
2 cups of Flour for breading
1 tablespoon for felling
1 jar of your favorite spaghetti sauce
Sliced mozarella
½ onion

Directions:

Filling:
Add the cottage cheese, oregano, 3 eggs, the shredded cheeses, and salt and pepper to taste. Mix well. Llet it stand for about 30 minutes. Meanwhile prepare breading station.

Breading:
In one bowl, add flower.
In a second bowl, add 2 eggs and a splash of milk. Beat it well. Add salt and pepper.
In the third bowl, add the bread crumbs.

Prepare Zucchini and squash:
Cut your zucchini and squash lengthwise.
Coat the zucchini and squash in the flour, then the egg, then the bread crumbs
Let them sit in the fridge 20 minutes before frying.

Pour about two tablespoons of oil in a pan. Fry the squash and zucchini.
In a sauce pot, add chopped onion, garlic and jarred sauce and simmer for about 20 minutes.

Add a few tablespoons of sauce to the bottom of the lasagna pan. Begin layering zucchini, cheese filling, sauce, and squash. Put a layer of mozzarella across the top.

Bake for 25 minutes at 350 or until golden brown
Let it stand for 10 minute slice and enjoy!

Gangsta! Turkey Stuffed Mac and Cheese Bites



Turkey Stuffed Mac & Cheese Bites

Leftover Mac & Cheese is not a common occurrence in our household. My daughter loves mac and cheese, it is her go to comfort food. Here is a nice snack to use up any leftovers and make smiles in your home.


Here is my Mac & Cheese Recipe:
1 Box of Macaroni
1 Cup of Milk
3 Cups of Shredded Cheddar Cheese or favorite cheese
1 ½ Tablespoon of Flour
2 Tablespoons  of Bacon Fat or Margarine
Salt & Pepper to Taste

Fill large sauce pan with water and bring to boil. Add Macaroni and cook until al dente.
In a medium sauce pan, over medium heat melt the bacon fat or margarine.
Slowly add the Flour stirring constantly.
Slowly add Milk, stirring constantly, then begin slowly adding the cheese.
Stir constantly until all ingredients are well incorporated.
Strain the macaroni
Stir in the cheese sauce.

Now on to the fun!

10 shots (from the bottle not shot glasses) of Your Favorite Hot Sauce
½ Onion, chopped
6 Strips of Bacon, cut and crisped
1 Cup of Turkey Shredded

4 Cups of Italian Bread Crumbs
4 Large Eggs, Beaten
1 TBSP Milk
2 Cups of Flour

Stir the hot sauce, 2 eggs, onion, crumbled bacon, and shredded turkey into the mac and cheese. Spread into a baking pan to a 1 to 2” thickness. Place in fridge for at least 4 hours or overnight.

Cut the mac and cheese into squares. 1 ½ to 2” square. You will need three bowls for the breading process. One bowl should have the flour (add salt and pepper to taste), one should have the bread crumbs, and the last 2 eggs beaten plus the milk.

Preheat pan with cooking oil of your choice.

Coat a few squares at a time, first in the flour, then the egg, and finally the bread crumbs.

Fry on each side until lightly golden brown. Place on plate that has a paper towel on it to drain some of the oil off.
A deep fryer would work very well for this as well. Not everyone has one so the pan will work J

Now that the Winter Holidays have passed, it is time to think about our sweetest as Valentines Day is just around the corner.
Make this 7 Up Cake with pink cream cheese icing for your sweetest or for your whole family.

Ingredients
3 Cups of Flour Sifted
3 Cups of Sugar
1 Cup of Unsalted Butter, softened
5 medium sized eggs
1 Cup of Cherry 7 Up
1 TBSP Vanilla Extract
1 TSP of Lemon Extract
Baker's Joy spray



For Frosting:

1 block of cream cheese, softened
1 TBSP Vanilla Extract
10-15 Drops of Red Food Coloring
1 stick of Softened Unsalted Butter 
1/2 bag of Shredded Coconut for Decorating


Preheat oven to 375

Using a mixer, cream the butter and sugar.
Add eggs
Slowly add Flour a little at a time
Mix in 7 Up and both extracts
Spray the bundt pan with Baker's Joy or other spray oil/flour product.

Pour the mixture into the Bundt pan and bake for an hour and 15 minutes.

Prepare Cream Cheese Frosting
Mix cream cheese, Vanilla Extract, Red Food Coloring, and Butter until a nice even pink

Allow cake to cool before frosting. Layer the Cream Cheese Frosting First then sprinkle coconut across the top to your liking.
